Amicho
The boiled corm of the enset plant, consumed as a staple food. It is prepared by peeling and cooking the underground corm until soft.
Atina'a-k'aayo
The Shekacho term for "male" enset types, which are characterized by being hard to decorticate, having a bitter corm, vigorous growth, and late maturation. Used primarily for processing into kocho and bulla.
Bacterial Wilt (Xanthomonas campestris pv. musacearum)
A devastating bacterial disease affecting enset and banana. It causes wilting, yellowing, and eventual death of the plant. It is the most serious threat to enset production.
Bulla
A starchy powder extracted from the pseudostem and corm of enset. It is obtained by squeezing the fermented pulp and allowing the starch to settle. Used to make porridge or as a thickener.
Corm
The underground swollen stem of the enset plant. It is rich in starch and is the main component used for making kocho, bulla, and amicho.
Enset (Ensete ventricosum)
A perennial, monocarpic plant in the Musaceae family, native to Ethiopia. Known as the "tree against hunger," it is a drought-tolerant staple food crop for over 20 million people in Ethiopia.
Eppo
The Kafficho term for wild enset, which is not cultivated and has a bitter corm and poor kocho quality.
Goncho
The Hadiya term for "male" enset types, which are hard to decorticate, have a bitter corm, are vigorous, and late-maturing. Used for processing into kocho and bulla.
Kocho
A fermented starch food made from the pseudostem and corm of enset. It is the most common enset food product and is prepared by fermenting the scraped and grated plant parts in pits.
Maache-k'aayo
The Shekacho term for "female" enset types, which are characterized by being less vigorous, early maturing, having a sweet tuber, and being easy to harvest. Used primarily for amicho (boiled corm).
Menticho
The Hadiya term for "female" enset types, which are less vigorous, early maturing, have a sweet tuber, and are easy to harvest. Used primarily for amicho (boiled corm).
Pseudostem
The above-ground "trunk" of the enset plant, made up of overlapping leaf sheaths. It is a major source of starch for kocho and bulla production.
Uuxo
The Kafficho term for cultivated enset, which is distinguished from wild enset (eppo) by its sweet corm and good kocho quality.
Wehenet
The name of the applied science knowledge hub that hosts the Enset Research Platform. It represents the integration of traditional knowledge with modern science.
Xanthomonas campestris pv. musacearum
The bacterial pathogen that causes Enset Bacterial Wilt (EBW), the most serious disease affecting enset production in Ethiopia.
